Quinoa Egg Salad

Dear Reader,
I am entering Quinoa Egg Salad in The Gluten Free Homemaker's  Monthly Challenge for June. Wish me luck on getting picked to have this recipe displayed on Linda's fabulous blog.

Recipe Tip: I made enough for one serving, but this recipe can easily be doubled even tripled.


1/2 cup cooked  and cooled quinoa
1 hard boiled egg, chopped
1 Tbsp mayonnaise
1 tsp mustard
salt and pepper to taste



Combine all ingredients in a bowl and stir to desired consistency. Salt and pepper to taste, enjoy!

  1. You are sweet! You don't need any luck to get highlighted. As long as you leave a link back, which you did, I highlight all the challenge recipes (in this case salads).

    I don't think I've ever added egg to quinoa, but I love hard boiled eggs. I think it's a great idea.

  3. I will try this quinoa recipe this weekend, Oh Wise Gluten Queen! I love finding new recipes for unusual grains like quinoa, b/c there just aren't enough out there. Nice job!!
